Not all confection in Japan is of Japanese origin. Among the many hannamagashi that have become extremely popular is a simple sponge cake known as a kasutera. The word, and indeed the confection, is of Spanish or Portuguese extraction. Kasutera (from castillo, Spanish for 'castle') have been made in Kagoshima, Nagasaki, and Hirado where the Iberian influence was strongest since the sixteenth century.
