Soy sauce brewing is, paradoxically, of relatively recent advent in Japan. Until the middle of the Edo period (1600'1868), the Japanese rarely used soy sauce. At this time, miso was the usual flavoring or a sauce made by skimming off the liquid from salt-fermented fish (uoshoyu). Soy sauce has taken over uoshoyu's role since about 1750.
