Wagashi (Japanese confectionery) is often either (a) Fresh [namagashi], made from freshly pounded rice and sweet bean paste. (b) Semifresh [hannamagashi] which will keep slightly longer [made with a firm gelatin extracted from seaweed and sweet beans or sweet bean paste] and (c) or Dry [higashi] which include sweet, sweet-salty, and savory rice crackers.
