is in some ways antithetical to the sushi experience in that there is no consultation with the counter man and no order in the presentation. While sushi is all about engagement, Kaiten zushi is an epitome of the very opposite principle.

Modern restaurant developments such as rotating sushi (kaiten zushi) in which the plates circulate on an endless chain and the customer chooses plates without consulting the counterman are, unsurprisingly, the cheapest form of sushi. This should be obvious: rather than the personal service that is expected in a Japanese restaurant, the service is impersonal, even mechanical. To add to that, there is no order in the presentation: any dish can succeed any other. When addressing a counterman directly one also has a wide choice, and a first-class sushi chef will be able to subtly steer his customer in order to enhance the dining experience.
